I had a creative moment and wanted to try to make a really GOOD Apricot jam. I've never made it before so after a bit of trial and error, lots of shambles in the kitchen, and quite a late night cooking, I am really pleased with the end result!

It's a must to try. Its apricot'y, lemony and has half the recommended sugar, so the sugar doesn't over power the fruit flavours. Tried it out on my Dad who loves his jams, and got the big tick of approval!

Just like the summer, enjoy it while you can!
